02 - Place the peeled and cut carrot sticks in a large bowl. Sprinkle cornstarch over them and toss until evenly coated. Drizzle in olive oil, then add smoked paprika, garlic powder, sea salt, and black pepper. Toss thoroughly until every stick is well seasoned.
03 - Arrange the seasoned carrot fries on the prepared baking sheet in a single layer without overlapping. Bake for 22 to 25 minutes, flipping halfway through, until the edges are golden brown and crispy.
04 - While the fries bake, combine crumbled feta, Greek yogurt, extra virgin olive oil, lemon juice, minced garlic, and fresh herbs if using in a medium bowl. Add freshly ground black pepper to taste. Mash and stir until the mixture is creamy and fully blended.
05 - In a small bowl, whisk together honey, chili flakes, and apple cider vinegar until well combined. Adjust the amount of chili flakes to reach your preferred heat level.
06 - Transfer the baked carrot fries to a serving platter. Drizzle the spicy honey over the top and serve alongside the feta dip for dipping.
