01 - In a large mixing bowl, add old-fashioned rolled oats, creamy peanut butter, honey or maple syrup, ground flaxseed or chia seeds, unsweetened shredded coconut if using, vanilla extract, and a pinch of salt. Stir thoroughly until a cohesive mixture forms.
02 - Fold mini dark chocolate chips gently into the mixture, distributing them evenly throughout.
03 - Transfer the bowl to the refrigerator and chill the mixture for 10 to 15 minutes to firm up for easier shaping.
04 - Scoop small portions and roll the mixture into 1-inch balls using your hands. Place onto a tray or plate lined with parchment paper.
05 - Refrigerate the formed balls for at least 20 minutes to set, then serve or store in an airtight container in the refrigerator for up to one week.
