Vegan Hummus Veggie Pinwheels (Printable)

# What You’ll Need:

01 - 4 large spinach or whole wheat tortillas
02 - 1 cup hummus, store-bought or homemade
03 - 1 medium carrot, julienned
04 - 1 small red bell pepper, thinly sliced
05 - 1/2 cucumber, deseeded and cut into thin strips
06 - 1/2 cup baby spinach leaves
07 - 1/4 cup shredded purple cabbage
08 - 2 tablespoons fresh parsley, chopped (optional)

09 - Pinch of black sesame seeds
10 - Few extra parsley leaves

# Directions:

01 - Lay a tortilla flat on a clean surface or cutting board.
02 - Evenly spread 1/4 cup hummus over the entire surface, reaching all the way to the edges.
03 - Arrange a single layer of carrot, bell pepper, cucumber, spinach leaves, cabbage, and parsley horizontally across the lower third of the tortilla.
04 - Starting from the edge with the vegetables, tightly roll the tortilla up into a log, securing the vegetables inside.
05 - Repeat the spreading, layering, and rolling process with the remaining tortillas and ingredients.
06 - Using a sharp knife, trim the ends, then slice each roll into 6 even pinwheels.
07 - Arrange pinwheels cut-side up on a serving platter. Garnish with black sesame seeds and parsley if desired. Serve immediately or refrigerate covered until ready to transport.
